Bison steak and elk venison

Z

ip round a supermarket and you can grab everything you need for a slap up meal in just ten minutes. But then there’s a limit to just how special a microwave lasagne and limp green salad can be – it certainly doesn’t whisper ‘I love you’.

Why not spend some time getting to know your food and support artisan producers while you’re at it? It’s time to prepare an unforgettable feast South Wiltshire style.

As the enticing smell of fresh coffee and the prattle of early morning bargaining fills the air, there’s no resisting the lure of Salisbury’s historic Charter Market which has been wheeling and dealing on Tuesdays and Sundays since 1227.

Head for the line of green and yellow umbrellas under which you’ll find local farmers selling seasonal vegetables fresh from the ground.

Laden with chunky organic veg, it’s time to take a trip to the Bush Farm Bison Centre . After a pleasant hour wandering around the 30 acres of woodland and getting to know the resident elks, bison, raccoons, and chipmunks, it’s time to pop to the shop and purchase your meat.

The bison steak is tender, nutritious and oh so delicious, and the elk venison simply sublime.

And what better way to conclude your culinary tour de force than with a selection of award-winning Lyburn Farmhouse  cheeses. Watch the cheeses being made as you decide between the Old Winchester and Stoney Cross. Bon appétit.
